Roast Duck Salad with Mango and Roasted Shallot Dressing
In the cool of early morning, roast the duck and prepare it for a delicious and colourful supper salad. Roasting the duck at a high temperature makes it crisp on the outside, tender within while ridding it of all its fat.
BBQ Pop Can Peking Duck
This is a twist of two dishes: Peking Duck and Beer Can Chicken. Cooking the duck in the beer can enables the fat to drip down into the pan of which you collect duck fat, a rich flavourful fat used to make duck confit or very tasty potatoes. The duck's skin is not as crispy as Peking duck, but the BBQ flavour of the meat is tasty. It's a great way to cook an entire duck. A great crowd pleaser.
