Roast Goose with Onion-Sage StuffingI developed this method of cooking goose for my Canadian Christmas Cooking book, first published in 1979 as The Christmas Cookbook and contributed a similar recipe to the Canadian Living Christmas Book. I still use the recipe every Christmas myself because it produces a crisp-skinned, grease-free bird that is a treat indeed. When I was doing research for my book, I learned that geese were useful additions to pioneer farms because their down provided warm quilts for cold winter nights; their feathers and wings made excellent dusters; their eggs were worth four hens’ eggs; and they made good watch “dogs”. Best of all, they provided a beautiful Christmas dinner long before people raised and ate turkey, and something very special for that holiday still. |

Braised Veal with Caramelized VegetablesStews often star in my company meals because they are so homey and delicious, and of course, completely make-ahead. Tender pieces of veal and vegetables kept crisp by doing them separately combine in a velvety sauce here. Serve with lots of crusty bread and a crisp green salad. |

Mushroom & Asiago Stuffed Veal Chops6 veal chops, butterflied (I use Organic)
3 Tbsp. Olive oil
3 Tbsp. butter
½ cup flour
Salt
Pepper
Stuffing
12 slices of Asiago cheese
12 thin slices of prosciutto
½ cup each – button & brown mushrooms- sliced
Sauce
8oz. dry white wine
4 tsp. chopped parsley
6 Tbsp. butter
6 oz. chicken stock

Spaghetti with Veal MeatballsA fabulous dish enjoyed by kids and adults alike! Meatballs made with lean ground veal are juicy, tender and delicious - don't forget to sprinkle them with freshly grated Parmesan cheese. All you need to complete the meal is a crispy salad and some garlic bread. |
