Rich Light Fruit Cake
I included a good selection of fruit cakes in my Christmas cookbook (now called Canadian Christmas Cooking), and this one was reprinted in The Toronto Star, then requested for a number of years by readers. It is dense, fruit-filled and very distinctive with its taste of ginger and pecans….one of my favourites too. Although moist and delicious even after a few days, let it ripen for three to four weeks for best results.
